Carrot Salad with Pineapple and Walnuts

Ingredients:

3 cups shredded carrots (about 4–5 medium carrots)

1 cup crushed pineapple (drained) or pineapple tidbits

½ cup chopped walnuts (lightly toasted for extra flavor)

⅓ cup raisins (optional)

½ cup mayonnaise or Greek yogurt (or a mix of both)

1–2 tsp honey or maple syrup (adjust to taste)

1 tbsp lemon juice or apple cider vinegar

Pinch of salt
