3 celery stalks, chopped

2 tbsp tomato paste

1 cup dry red wine (like Cabernet Sauvignon or Merlot)

1 cup beef broth (low-sodium preferred)

2 sprigs fresh thyme (or 1 tsp dried)

1 bay leaf
